10 large potatoes cut into 2 cm cubes
4 pork fillets or loin cuts (100 to 150 g per person)
3 cloves garlic, finely chopped
2 tbs sage, finely chopped
2 tbs olive oil
salt & pepper
Preheat the oven to 220°C.
Keep 1 tbs of garlic aside.
Mix the rest of the garlic with the, sage, salt and pepper in a small bowl. Rub the meat with the seasoning.
Mix the potatoes with olive oil and remaining garlic.
Place the potatoes and the meat in a roasting pan in the oven.
After 30 m, shake and brush the meat with the juices. Reduce the oven temperature to 160°C.
Cook for a further 15 to 20 m.
Let the meat rest for 5 m. Cut it in thin slices.
Serve with green beans or a simple tomato sauce.
