Gnocchi with pumpkin & spinach

For ➍
butternut squash (peeled, deseeded, cubed)
800 g baby spinach
1 onion (peeled & chopped)
1 tbsp fresh sage (chopped)
500 g gnocchi
50 g grated Parmigiano
2 tbs olive oil
pepper

Heat the olive oil in a Dutch oven and sauté the onion until translucent. Add the pumpkin cubes and sage and cook for about 12 m, stirring occasionally, until the pumpkin cubes are soft.
Add 50 cl water and bring to a boil. Add the gnocchi. Cook uncovered over low heat for 3 m.
Rinse the spinach and add it to the pan. Let the spinach wilt.
Stir in the Parmigiano, season with salt and pepper, and serve.

Pinsa primavera with anchovy

For ➍ 
2 pinsa bottoms
400 g baby spinach
1 clove garlic
140 g green pesto
125 g marinated artichoke hearts
50 g anchovy fillet
250 g mozzarella
2 tbs dried oregano
spicy olive oil
nutmeg
salt & pepper

Preheat the oven to the highest setting. Rinse the spinach and drain well. Peel and chop the garlic. Stew the garlic and spinach in a pan with olive oil, season with pepper, salt and nutmeg. Scoop them out of the pan and drain well in a colander. Press out all the liquid with the rounded side of a spoon.
Drain the anchovies and artichoke hearts. Halve the artichoke hearts. Spread a layer of pesto on the pinsa bases and spoon the spinach in heaps on top. Finish them off with the halved artichoke hearts and anchovy fillets. Tear the mozzarella into pieces and top the pinsas with it. Season the pinsas with the oregano and bake them in the oven for 10 minutes.
Finish the pinsas with a little (spicy) olive oil and the extra spinach. Cut them into pieces and serve.


♥︎Quiche without pastry

For ➍
2 sweet potatoes, finely mandoline sliced
bag baby spinach
4 eggs
2 tbs Greek yoghurt or whipped cottage cheese
1 clove garlic, crushed
100 g smoked salmon
100 g fresh goat cheese or 1 goat cheese slice
olive oil
salt & pepper

Spread thin slices of sweet potato in a pie dish to make a good base. Drizzle with olive oil, salt and pepper. Place in a preheated oven at 200°C for 10-15 min until edges are lightly golden.
Whisk the yoghurt, garlic, salt and pepper
Pour over the sweet potato. Divide the spinach over the dish. Add pieces of smoked salmon and crumbled goat cheese. Place in a preheated oven at 200°C for 30 min.
Serve with green salad.


♥︎Miso soup with pak choi & citrus balls

For ➋ large or ➍ small bowls 
1 l chicken or vegetable stock 
1 piece of ginger (1 thumb in size) 
4 small or 1 large pak choi  
2 handfuls of green leafy vegetables such as spinach or asparagus 
1 tbs dark or red miso 
for the meatballs
400 g minced poultry (or pork, beef or a mix) 
1 shallot 
1 clove of garlic 
1 piece of ginger (2.5 cm)
grated zest of 1 unsprayed orange & lemon 
25 blades of chives 
5 sprigs of coriander, the leaves (or other green herbs such as basil or parsley) 
salt & black pepper from the mill 
finish with available: roasted sesame oil, chili flakes, sesame seeds, soy sauce, green herbs, spring onion, fresh chili peppers, etc. 

Bring the stock to the boil with the sliced ginger (no need to peel it). Let the pot simmer gently with the lid on while you roll the meatballs. To do this, finely grate the ginger and chop the shallot, garlic and herbs. Mix together with the grated orange and lemon zest into the minced meat. Season the minced meat with salt and pepper and roll it into balls the size of a cherry. Remove the ginger from the broth. Then cook the meatballs in it for 3 to 5 minutes until done (when they float to the top, they are ready). Remove the stems from the pak choi and let it cook for 3 m, so that they are cooked but still have bite. Place a few tablespoons of stock in a bowl and dissolve the miso in it. Mix into the soup together with the green leafy vegetables. Or: after temporarily removing the balls, add the miso all the vegetables, first the hard white bok choy, then the green, to the broth. Add the balls at the end. 

♥︎Spanakorizo ​​(Greek spinach rice).

For ➋
400 g spinach leaves (wild spinach)
150 g onions
20 g dill
4 tbs olive oil
120 g carnaroli rice
5 cl dry white wine
25 cl water
1 lemon
salt & freshly ground black pepper

Check the spinach, wash it several times in plenty of water, drain and chop coarsely. Peel the onions and chop them finely. Remove the dill from the stems, set some tops aside and chop the rest finely.
Heat 2 tbs olive oil in a heavy-bottomed saucepan over medium to high heat. Fry the onions until translucent; stir regularly.
Add the rice and fry briefly. Deglaze with the wine. Reduce the wine almost completely.
Add the chopped spinach and let it shrink. Add 25 cl of water, add some salt and let it simmer without a lid for about 15 m (depending on the type of rice) over low heat, until the rice is al dente; stir occasionally.
The rice should be cooked, but not falling apart. 
Stir in the dill. Season with the finely grated zest of ½ lemon, 1-1½ tbs lemon juice, 1-2 tbs olive oil and black pepper. The rice should taste fresh and lemony.
Divide the spinach rice over two deep plates. If desired, drizzle some olive oil over it and grate over the zest of a few lemon wedges. Sprinkle the dill tops over it.


Poached sole fillets with spinach puree & saffron

For ➍
12 sole fillets
500 g potatoes
350 g spinach
butter*
5 dl fish stock
1 dl cream**
saffron
pepper & salt
for the garnish:
thyme
spring onion

Cook potatoes in salted water, drain and crush.
Stew spinach. Mix into the mashed potatoes. Season with salt and pepper.
Poach the rolled sole rolls in 4 dl fish stock.
Reduce the remaining 1 dl fish stock with 1 dl cream* and a pinch of saffron. Season with salt and pepper.
Decorate with tufts of thyme and spring onion.

*Replace with olive oil
**Replace with oat cream.

Salmon & miso butter & spinach

For ➍
25 g butter, at room temperature
25 g miso paste
1 ts finely grated lemon zest
1 ts lemon juice
250 g spinach
2 shallots
1 clove of garlic
4 tbs oil
salt
4 salmon fillets (150 g each)

Mix the soft butter with the miso paste, the finely grated lemon zest and the lemon juice into a smooth paste. [Put in the center of a piece of cling film. Roll up the foil tightly to form a roll, and twist the sides like with a toffee.]* Cool in the refrigerator.
Clean the spinach, wash the leaves and drain in a colander.
Peel and chop the shallots and garlic clove. Heat 1 tbs of oil in a large saucepan and sauté the shallot and garlic until translucent. Add the spinach. Sprinkle with salt and spoon the spinach leaves until shrunk. Add a little more salt if necessary.  Keep the spinach warm.
Grill the salmon fillet strips over hot coals or fry them in a non-stick pan in 3 tbs of oil.  Allow 3 to 4 m per side**.  Season the grilled or fried salmon with salt and put miso butter on top.

Serve the salmon on a bed of spinach. Serve with glass noodles or soba noodles. ***

*Optional
**The salmon will be glassy inside. If preferred, cook it for 1-2 m longer. 
Alternatively, marinate the salmon in a mix from miso paste, soy sauce, mirin, sesame oil, fresh garlic, ginger powder & honey. In a cast iron skillet fry the salmon with the non-skin part facing down for 1 m. Then flip salmon over and bring the cast iron into the oven and bake for 8-11 m (depending on thickness of salmon)Send salmon into the oven directly and bake for 11-15 minutes (depending on thickness of salmon). Or bake salmon in the oven directly bake for 11-15 minutes (depending on thickness of salmon). You can mix half of the marinate with 1or 2 tbs of water, boil for a m, and glaze the salmon with it, instead of using the miso butter. 
***Add some sauce to the noodles to spice them up.

Thai fish soup

For ➍
1 tbs cooking oil
1 clove garlic, finely minced
1 ts fresh ginger, grated
¼ red onion, thinly sliced
½ red chilli pepper, sliced (optional)
1 stalk lemongrass, bottom stalk only, bruised (substitute with peel of lemon or lime)*
4 kaffir lime leaves, torn (substitute with peel of lemon or lime)*
40 cl can coconut milk
2 dl vegetable broth
juice of ½ lime
1 tbs fish sauce
175 g shrimps, peeled & deveined
220 g salmon, cut into 2.5 cm chunks
assorted vegetables, such as spinach, snow peas, kale, tomatoes, bell pepper, etc.
1 tbs minced cilantro/coriander

In a wok or soup pot over medium high heat, add cooking oil and swirl to coat. When hot, add in the garlic, ginger, red onion, chilli pepper, lemongrass, kaffir and gently cook for about 2 m to release the aromas and flavors.
Pour in the coconut milk and broth and let simmer for 15 m. Remove the lemongrass, kaffir (or the lemon/lime peel if using)* and discard. Season broth with fish sauce and lime juice to taste.
Add shrimp, salmon, vegetables and cilantro. Cook for 3-4 m or until the shrimp and salmon is cooked through.

Add 250 g cooked dried rice noodles to turn the soup into a light dish.

*When substituting with the peel of a lemon or lime, use a vegetable peeler to get thin strips of peel  and give each strip a good bruising or twist to release the oils.
**Eventually, add some fresh tomatoes, cut into wedges.

Spinaci con funghi
(Puglia spinach & mushrooms)

For ➍
4 tbs olive oil
1 small onion, chopped
2 cloves garlic, chopped
300 g fresh mushrooms, sliced
250 g clean fresh spinach, roughly chopped
2 tbs balsamico
10 cl white wine
salt & freshly ground black pepper to taste
chopped fresh parsley, for garnish

Heat the olive oil in a large skillet over medium-high heat. Saute onion and garlic in the oil until they start to become tender. Add the mushrooms, and fry until they begin to shrink, about 3 to 4 m. Toss in the spinach, and fry, stirring constantly for a few m, or until spinach is wilted.
Add the vinegar, stirring constantly until it is absorbed, then stir in the white wine. Reduce heat to low, and simmer until the wine has almost completely absorbed.
Season with salt and pepper to taste, and sprinkle with fresh parsley.  Serve hot. 

Spinach & minced meat curry

For ➍ 
450 g fresh spinach 
1 ts salt for cooking spinach 
1 tbs salad oil or olive oil 
300 g minced meat 
1 onion, finely chopped 
2 cloves garlic, finely chopped 
3-4 tbs curry powder 
1 red chilli, cut into small pieces 20 cl water 
1 ts salt for seasoning 
4 tbs ketchup 
2 tbs Tonkatsu sauce or 1 tbs Worcestershire sauce 
4 servings rice or naan 
4 boiled eggs (optional) 

Wash the spinach and drain the water. Boil plenty of hot water and add 1 ts salt. Put spinach in boiling water, submerge the spinach and boil for about 1 m. Immediately soak in cold water after boiling. When it cools, transfer it to a cutting board and cut it into 1 cm width. Then squeeze the spinach to drain excess water and set aside. (if you don’t cook curry immediately, keep it in the fridge until required). 
Heat 1 tbs of oil in a frying pan over medium heat, add chopped onions and garlic and fry. When they become soft, add minced meat and fry. When the color of the meat changes, lots of fluid and fat will come out. Absorb it with kitchen paper. Add curry powder and red chili and fry until the curry aroma comes out. Pour 20 cl of water and add salt, ketchup, tonkatsu (or Worcestershire) sauce. After boiling, cover and simmer over low heat for about 15 m. Take the lid off and cook for 5 m. 
Add spinach* to the curry and mix gently, and cook for 5 m. Serve with rice or naan. 

*Before adding spinach, if the curry is too watery, cook for an additional 5 m to reduce excess water. *About seasoning: at first, add less than the amount stated in the recipe, check the taste, and then add if it is not enough.

Cod with spinach, shallots,
smoked salmon & Blanche du Hainaut

For ➋
800 g cod fillets 
4 tbs olive oil 
15 cl Dupont Blanche, Hainaut white beer
500 g spinach 
4 shallots, chopped 
100 g butter 
100 g smoked salmon, cubed
400 g potatoes 
1 bunch of chives 
25 cl fresh cream 
1 egg

Bake the cod fillets slightly in olive oil. Bake for 10 m in the oven at 180 ° C. 
Deglaze with white beer and simmer for 1 m.. 
Meanwhile, stew the spinach leaves cooked and shallots briefly in 50 g of butter . Add the smoked salmon into cubes increased. 
Boil and mash the potatoes. Add a bunch of chopped chives and warm cream to the puree.  Mix well and season with salt and pepper, then add the egg and 50 grams of butter.
Serve.


Spinach & mushrooms

For ➍
125 g smoked bacon
1 clove of garlic
250 g chestnut mushrooms
600 g spinach (washed)
50 g Parmigiano Reggiano

Heat a frying pan without oil or butter and fry the bacon in 6 m. Turn regularly. Remove from the pan and drain on kitchen paper. Clean the mushrooms with kitchen paper. Slice the mushrooms and garlic.
Fry the garlic 1 m g. Add the mushrooms and fry for 5 m. Heat another frying pan without oil or butter, add the spinach in parts and let it shrink while stirring. Drain in a colander.
Use the convex side of a spoon to push out as much liquid as possible. Season with pepper and salt if desired. Mix in a bowl with the mushrooms and bacon.
Grate the cheese on top and serve.

Eryngii with wild garlic

For ➍ 
20 cl olive oil (+ some extra for frying)
3 tbs lemon juice
pinch of salt
pinch of black pepper
20 g spinach
40 g wild garlic
100 g pork throat (or fat lard) (or pancetta)
6 eryngii mushrooms
1 shallot, finely chopped)
6 sprigs of thyme

Make the wild garlic oil. Heat the olive oil together with the lemon juice, salt and pepper to 60 °C. Pour the oil into a blender along with the spinach and wild garlic and blend until smooth.  Set aside.
Cut the pork throat (or bacon) into very fine slices.
Cut the eryngii in half. Color them golden brown in some olive oil. Season with salt and pepper. 
Cover with a slice of pork meat*. Divide the shallot and thyme over it. Drizzle with the wild garlic oil and place under the grill for 1½ m.
Then drizzle with a few more drops of wild garlic oil. Serve warm.

*Pre-bake meat, if lard, in a pan for a few m.

Salmon in lime broth

For ➋
30 cl chicken or vegetable stock*
1 lemongrass stalk, trimmed, peeled, white part finely sliced 
2 shallots, peeled, finely sliced 
1 mild fresh red chili, finely sliced 
100 g mushrooms (oyster mushrooms or fresh shiitake), finely sliced 
1 ts sugar** 
1 tbs vegetable oil 
2 150 g fresh salmon fillets, with skins, bones removed 
sea salt & freshly ground black pepper 
100 g (baby) spinach leaves 
1 tbs (Thai) fish sauce 
1 tbs fresh lime juice 

Bring the stock to the boil in a large saucepan. Add the lemongrass, shallots, chili, mushrooms*** and sugar. Reduce the heat. Simmer for 10 m. ***
Meanwhile, heat the oil in a frying pan. Sear the salmon fillets, skin-side down, until the skin is crisp. Turn once and cook briefly on the other side, leaving the inside slightly pink. Remove from the heat and season with sea salt and freshly ground black pepper. 
Boil the spinach in the hot broth for 5 s, remove with a slotted spoon and arrange in warmed shallow soup bowls. 
Place the salmon on top. 
Add the fish sauce and lime juice to the broth, and spoon it around the salmon.

* Use a miso based broth instead (use 1 tbs miso paste for 30 cl water)
** Optional
*** Add mushrooms for the last 3-4 m for a meatier mushroom

Japan style risotto

For ➍
1 tbs sesame oil
300 g sushi rice, rinsed
2 garlic cloves, pressed or finely chopped
2 scallions, cut into thin rings, keep white & green parts separately
4 tbs white miso paste
50 g butter
400 g mixed Asian mushrooms, such as shiitake **, shimeji *** (beech mushroom) and enoki **** / *
50 g young spinach (optional) *
sesame seeds, toasted

Heat the sesame oil in a large skillet over medium heat. Fry the sushi rice, garlic and the white parts of the scallions 1 m while stirring until the rice grains are coated with oil. Spoon the rice mixture into a pan / wok with a lid.
Beat the miso paste with 75 cl of boiling water until the miso is completely dissolved and pour the liquid into the rice. Boil 10-15 m
Melt 20 g of butter in the frying pan over medium heat. Fry the Asian mushrooms 3 m until they are slightly softer. Stir them, put the lid on. Cook for 5 m over low heat, or until the mushrooms are al dente soft. *****
Stir the remaining butter into the baby spinach. Cook for 5 m with the rice. Add if necessary. extra liquid.
Let the rice rest for 1 m. Add sea salt and freshly ground black pepper to taste. 
Sprinkle the green parts of the scallions and toasted sesame seeds over the risotto.

* use other vegetables, such as pumpkin and snow peas

Duck breast fillets with spinach & lacquered sauce with ginger

For ➍
2.2 dl fresh brown veal stock
2 tbs soy sauce
4 shredded ginger balls in syrup
2 large duck breast fillets
900 g spinach
2 shallots
2 garlic cloves
4 tbs roasted peanuts

Preheat the oven to 180°C. Put the veal stock, the soy sauce, the ginger syrup and the shredded ginger balls in a saucepan. Reduce to half over low heat.
Finely chop the shallots, rinse the spinach, peel and press the cloves of garlic. Coarsely chop the peanuts. Keep apart.
Make diamond-shaped notches in the skin of the duck breast fillets with a sharp knife. Bake the skin side golden brown on a high heat, in a frying pan without fat, and then the other side*. Slide the duck breast fillets into the oven for another 25 m to continue cooking**. Turn the fillets over, place them on a cutting board, cover them with aluminum foil and let them rest for 5 m.
Pour 4 tbs of the released cooking fat into a sauté pan. Add the spinach, shallots and garlic. Shrink the spinach over a medium heat. Season with pepper and salt.

Slice the duck breast fillets. Serve with the spinach and the sauce. Sprinkle with peanuts and add pommes of dauphine or potato quenelles.

*Avoid splashing and pour the released cooking fat into a bowl before frying the other side of the duck breast fillets until golden brown.
**Or continue to bake in the pan until done.

Spinach salad with balsamico vinaigrette

For ➋
100-125 g spinach, rinsed & dried
2 small cucumbers or ½ cucumber
200 g grape or cherry tomatoes, halved
1 medium carrot, thinly sliced
shaved Parmigiano
balsamico vinaigrette

Rinse spinach and spin dry. Transfer to a large salad bowl.
Slice cucumbers, thinly slice carrots and halve cherry tomatoes. Toss all the veggies into the salad.
In a small bowl, combine the dressing ingredients: 2 tbs balsamico, 2 tbs olive oil, ½ ts salt and ¼ ts pepper. Briskly whisk or shake the dressing ingredients together.

Sprinkle the top with Parmigiano and drizzle the salad with balsamico vinaigrette.

Egg in bun

For ➍
4 long pistolets (small buns)
4 eggs
6 cherry tomatoes
16 leaves of spinach
3 mushrooms
4 slices of cheese
2 tbs of melted butter
pepper & salt

Preheat the oven to 180°C. Place baking paper on a baking tray.
Cut the mushrooms into slices, the cherry tomatoes in quarters.
Carefully hollow out the pistolets. Make sure that the outside of the rolls stays intact.
Coat the inside of the buns with butter and sprinkle with salt and pepper.
Put 3 leaves of spinach, a few slices of mushroom and 3 pieces of tomato in each roll. Put a slice of cheese on it. Press it just as well.
Break an egg above each bun. Finally divide a little spinach, piece of tomato and slice of mushroom over the bun.
Sprinkle a little pepper and salt over it.
Bake the rolls in the oven for 10 to 12 m. Cover the rolls loosely with aluminum foil. Bake the rolls for another 20 to 25 m.

Serve hot.

Ri­sot­to ag­li spina­ci (spinach risotto)

For ➍
320 g carnaroli rice (vialone nano, arborio)
175 g fresh spinach
50 g celery, finely diced*
70 cl vegetable stock
a small glass of white wine*
60 g grated Parmigiano**
½ (red) onion
1 garlic clove, crushed
40 g extra virgin olive oil
knob of butter
salt & pepper

Blanch the spinach and then chop it finely.***
In a pan, pour in some extra virgin olive oil. Cook the crushed garlic clove, until brown. Remove the garlic and add the onion, finely chopped (add the celery if used). Cook the onion (& celery) until it becomes transparent. You can then add the spinach, stir, and season to taste. Set aside. (When using purée, add the spinach after cooking the rice).
In a casserole, toast the rice with 20 gr of extra virgin olive oil. When the rice is hot throughout, (add the wine and let evaporate), the boiling stock all at once and mix gently. Cover the casserole with the lid and allow to cook for 15 m on a low flame.(See tip).
When the rice is cooked, add the spinach, remove from the fire and add the grated Parmigiano (or Taleggio). Mix thoroughly but gently until the cheese melts.
Allow to rest for 2 m in casserole with lid on and covered with a cloth.

Serve with a few lemon slices, or sprinkle with some lemon juice.
Serve as a side dish with grilled fish or meat.

*Optional.
**Or use cubed Taleggio, rind removed & cut into small blocks
***Purée them if you want. Put the spinach in a bowl lined with a clean dish towel. Pour boiling water over the vegetable. When cold enough to handle, squeeze the water out of the spinach with the towel. Purée in a food processor with 1 tbs of butter. Adjust with pepper.

Great green goddess salad

For ➍
1 clove garlic
1 small anchovy*
½ handful lightly packed fresh parsley
2 medium scallions, white & green parts separated
½ ts dried tarragon
6 cl plain Greek yogurt
2 tbs mayonnaise
1 tbs white wine vinegar
½ ts salt
2 tbs olive oil
125 g baby spinach, washed & dried
1 medium cucumber, peeled & sliced
1 medium avocado, sliced

In the food processor, combine the garlic, anchovy (if using), parsley and the white parts of the scallions. Process to mince very finely. Scrape down and process again. Add the tarragon, yogurt, mayonnaise, vinegar and salt and process until smooth. With the machine running, drizzle in the olive oil until well mixed. Transfer to a pouring cup or jar; keeps for 4 days, tightly covered, in the refrigerator.
Spread the spinach on a platter or 4 small dinner plates. Cover with cucumber and avocado, and drizzle with dressing, then chop and sprinkle the scallion greens over the salads. Serve immediately. Top with cooked chicken or ham for a main course salad, or serve alongside grilled shrimp.

*The classic green goddess dressing has a hint of anchovy for umami, but if you want to leave it out, you can. Double the amounts in the dressing ingredients to make extra for salads throughout the week.
