Strudel di mele
(apple strudel)

For ➍-➏
 for the dough:*
150 g flour
a pinch of salt
2-3 tbs granulated sugar
1 egg
2-3 tbs olive or vegetable oil (or melted butter)
water
for the filling:
750 g (1-2) apples
75 g granulated sugar
handful of raisins, pre-soaked in rum
handful of pinoli (pine nuts), or slivered almonds
1-2 tbs cinnamon
75 g breadcrumbs
a good nob of butter
for baking and finishing:
more flour
melted butter
powdered sugar

If using homemade dough, prepare it by mixing the dry ingredients, then the egg and oil, then finally just enough water to form a ball. Knead briefly until the dough is soft and elastic. Wrap the dough in plastic wrap, then in a towel, and let rest for a good 30 m or more.
While the dough* is resting, peel, core and slice the apples as thinly as you can.
Add the sugar, cinnamon and raisins, drained and squeezed dry, and the pine nuts or almonds.  Mix things all together, moistening the mixture with a bit of the rum in which the raisins have been soaked. Set aside.
Sauté the breadcrumbs in the melted butter over very gentle heat until they are lightly browned. Do not over-brown the crumbs. When the dough* has rested at least a good 30 m, mold it into a flat, rectangular shape and place it on a well-floured cotton dish towel.
Roll the dough* out as thinly as you can manage into a large, rectangular shape. Older recipes tell you to stretch it further with your hands, as you might a thin-crust pizza.
Brush the dough* liberally with melted butter, leaving the edges dry.  Spread the sautéed breadcrumbs in a thin layer all over the dough, leaving the edges clear.
Pour the filling over the breadcrumbs and spread it out even, again avoiding the edges.
With the aid of the towel, roll up the dough into a large lozenge-shaped loaf.
Once the strudel is fully rolled up, tuck the edges under and, very gently, transfer this loaf onto a baking pan or sheet. Brush the loaf liberally with melted butter. If you prefer a ‘shiny’ surface to your strudel, brush the surface with milk or egg wash instead.
Bake the strudel in a hot (200°C) oven for a good 30-45 m, until golden brown all over. (I find it helps browning if you brush it once or twice with more melted butter while it bakes.) Let the strudel cool entirely. Top with powdered sugar before serving in thick slices, perhaps with a nice side of whipped cream or ice cream if you’re feeling decadent.

*If using store-bought pastry dough, just lay it out flat on the sheet it is usually attached to and lay the breadcrumbs and filling out on top, then roll it up as usual. You won't need to brush it with butter, as pastry dough already has a high fat content, [although brushing it with milk will help it brown]. Use puff pastry or phyllo dough, which makes a particularly delightful Strudel, lay out one sheet, brush it with melted butter, then repeat until you have 4 or 5 layers of dough, before laying on the breadcrumbs and apple filling.

200 g cooked chickpeas
2 tbs vegetable oil
2 dl stock or water
whole spices:
2 cinnamon sticks
2 whole cardamom pods
3-4 cloves
1 ts peppercorn, lightly crushed

1 heaped ts cumin seeds
1 heaped ts coriander seeds
1 heaped ts cardamom seeds
2 ts cayenne pepper
½ ts ground turmeric
2 tbs distilled vinegar

Combine all spice mix ingredients in an electric food processor and process until a thick paste is formed, use vinegar sparingly as it can make the overall taste too acidic. Store refrigerated in an airtight container for up to 2 weeks.

Add lamb to the pan and mix with all the spices. Add 20 cl stock or water, cover pan and allow to cook till meat is tender. Depending on the cut of meat, it may take up to 30 m on medium heat.

Cinnamon-braised lamb shanks

For ➍
4 cm piece of ginger
4 garlic cloves
100 g golden raisins
1 tbs ground cinnamon
2 red chillies
2 ts ground coriander
20 cl natural yogurt
6 lamb shanks
groundnut or vegetable oil
1 cinnamon stick
2 star anise
1 bay leaf
8 shallots
50 cl chicken stock
sea salt & freshly ground black pepper

Peel and roughly chop the garlic and ginger. Blitz along with the raisins, ground cinnamon, chillies and ground coriander in a food processor. Add the yogurt, and a good pinch of salt and pepper and pulse until just mixed. Make incisions in the lamb shanks and place in a bowl. Rub the marinade into the meat, cover and marinate for a few h or even for a day if possible.
When you are ready to cook the meat, peel and finely slice the shallots. Add a drizzle of groundnut oil to a deep, heavy-based casserole - large enough to hold all the shanks, and fry the cinnamon stick, star anise and bay leaf for a minute. Add the shallots, then turn the heat right down and sauté for 10 m until soft and sticky. Spoon the mixture into a bowl and leave to one side.
Drizzle in a little more oil and turn up the heat. Brown the lamb shanks in batches, reserving any marinade left in the bowl. When the meat is brown on all sides, return it all to the pan with the softened shallots and any reserved marinade. Pour in the chicken stock and bring to the boil. Carefully cover with foil, then cook over a low heat for 3 h, turning the shanks regularly and adding more stock if it gets too dry. The lamb should be tender and falling off the bone.
Remove the shanks from the pan and cover with tinfoil to keep warm. Turn up the heat and let the sauce bubble away for around 10 m until you have a lovely, thick sauce.

Return the lamb shanks to the pot and serve. Perfect with mashed potato or creamed cauliflower and greens, or even steaming basmati rice.

Chicken in milk & lemon

For ➍
1.5 kg chicken***
sea salt & freshly ground black pepper
olive oil*
½ stick cinnamon
1 good handful fresh sage, leaves picked
zest of 2 lemons**
10 cloves garlic, skin left on
50 cl milk

Preheat the oven to 190°C.***
In a fitting pot for the chicken, season it generously all over, and fry it in a little olive oil, turning the chicken to get an even colour all over, until golden.
Remove from the heat, put the chicken on a plate, and throw away the oil left in the pot. This will leave you with tasty sticky goodness at the bottom of the pan which will give you a lovely caramel flavour later on.
Put the chicken back in the pot with the rest of the ingredients, and cook, lid on, in the preheated oven for 1½ hours. Baste with the cooking juice when you remember. The lemon zest will sort of split the milk.
To serve, pull the meat off the bones and divide it onto your plates. Spoon over plenty of juice and the little curds.

Serve with wilted spinach or greens and some mashed potato.
Squeeze the cloves of garlic onto the chicken (or on slices of thick country bread).

*Use butter for better resistance to high temperature.
**Use 1-2 chopped preserved lemons (citrons confits) instead (cut down on the salt, as the lemons are pickled). Wash them with cold water to remove some salt, remove seeds as well.
***Smaller quantities, like 4-600 g chicken thigh fillets without bone, can be prepared at stove-top. Adapt quantities of other ingredients. Brown the chicken, add the other ingredients, cover and cook on medium fire for about 30 m.

Cinnamon apples @ microwave

For ➋-➍
2 apples, peeled, cored & sliced
1 ts cinnamon

Place apples and cinnamon in a microwave safe bowl and stir until apples are coated with cinnamon. Cover bowl with plastic wrap and poke a few holes in the top to let the steam escape. Place in the microwave and cook on high for 1 m.
Remove apples from the microwave and carefully remove the plastic cover. Stir apples and re-cover. Cook for 1 m longer.

Serve. Add a blotch of ice-cream, if wanted.

Couscous & veal shank

For ➍
1 kg veal shank
500 g couscous
1 large sweet onion
150 g chickpeas, soaked or canned
1 butternut squash

1 l chicken stock
1.5 cinnamon stick
1 tbs ginger powder or ras-el-hanout
1 ts turmeric (or a few strands of saffron)

Peel the onions and chop coarsely. Sauté them in a dash of olive oil at the bottom of the couscoussière or large casserole. Add the veal shank and 1 tbs of butter. Allow to simmer without browning.
Sprinkle the couscous in a large bowl and add a pinch of salt. Pour 1 tbs of olive oil over the couscous and mix the grains well together so they do not stick together.
Add the lukewarm water until the grains are well wet, but not dripping. Allow 5 to 7 m to dry. Rub  the couscous loose between the hands so that the grains are detached from each other. Or make couscous according to instructions on the box *.
Season the meat with the cinnamon stick, saffron, ginger powder, pepper and salt. Deglaze the veal shanks with the stock and simmer for 10 m.
Cut the carrots in pieces of 5 cm. Add the carrots. Peel the butternut squash and cut into pieces of 5 by 5 cm. Add the pumpkin. Add the chickpeas (if canned or jar, add 10 m before the end of cooking). Simmer again for 10 m. Add zucchini.
Full cooking time: ± 1h (possibly slightly shorter for the vegetables).
[Meanwhile steam the couscous. Put the grains in the steam basket of the couscousière and place on top of the pot with the meat. Let stand until the couscous is visible through the steam of the dish.
Remove the couscous from the steamer and sprinkle lightly with water. Rub the couscous loose again in the hands. Repeat this process two more times.]

Before serving, add 1 tbs of butter to the couscous.
Serve the couscous in a large bowl with the meat on top. Dress the chickpeas, onion and butternut and vegetables around the veal shanks and pour over a few spoonfuls of the sauce.
