Roasted salmon & broccoli bowl

For ➍ 
4 tbs toasted sesame oil 
2 tbs soy sauce or tamari 
1 tbs rice vinegar 
1 tbs honey 
1 5 cm piece fresh ginger, peeled and finely grated (about 1 tbs) 
1 garlic clove, finely grated 
500 g broccoli, trimmed & cut into florets, thick stems discarded 
2 scallions, trimmed & cut diagonally into 3 cm segments, plus thinly sliced scallions for garnish 
1 tbs olive oil, plus more for brushing the salmon 
salt & black pepper 
4 175 g skin-on salmon fillets 
½ lime, for serving 
sesame seeds, for serving 

Heat oven to 220 °C. Rub the salmon fillet with 1 tbs olive oil and season with salt and pepper on all sides. Set aside. 
Rinse the rice until water runs clear. In a small lidded saucepan, combine the rice, 1 ¼ cups water and 1 tbs olive oil. Season the water to taste with salt and bring to a boil over high heat. Cover and reduce to a gentle simmer over medium-low and cook for 12 to 15 minutes, until the rice is plumped. Remove from heat and let rest, covered, for 5 minutes. Meanwhile, on a large sheet pan, toss the broccoli, red onion and remaining 2 tbs olive oil. Season generously with salt and pepper. Roast in the oven for 15 to 20 minutes, tossing once, until tender-crisp and lightly browned. In a large salad bowl, combine the cooked rice, roasted broccoli and onions. To the same sheet pan, add the salmon fillet skin side down (if present) and roast until just cooked through, 10 to 14 minutes. While the salmon roasts, add the lemon juice, mustard and anchovies to the bowl with the broccoli mixture and toss. Season with salt and pepper to taste. Flake the salmon (discarding any skin) and add to the bowl. Fold in three-fourths of the watercress. Top with the remaining watercress and serve.

Sheet-Pan & salmon & broccoli with sesame & ginger

For ➍

4 (175 g skin-on salmon fillets
½ lime, for serving 
sesame seeds, for serving 

Heat the oven to 220°C degrees. In a small bowl, whisk 3 tbs sesame oil with the soy sauce, vinegar, honey, ginger and garlic until smooth. Set the glaze aside. 
Place the broccoli florets and 1 ½-inch scallion segments on a sheet pan. Drizzle with 1 tbs olive oil and the remaining 1 tbs sesame oil. Sprinkle with ½ ts salt and ¼ ts black pepper, toss well and roast for 5 m. 
While the broccoli and scallions roast, place the salmon fillets on a plate and pat dry with paper towels. Brush all over with olive oil and sprinkle with salt and pepper.
 
Toss the broccoli and scallions and move to the edges of the pan, clearing spaces in the center for the salmon fillets. 
Place the salmon fillets, evenly spaced, on the center of the pan. Brush the fillets generously with the glaze.

Return the pan to the oven and roast until the salmon is cooked through but still slightly rare in the center, about 12 m.
 Squeeze the lime over the broccoli and sprinkle with salt. Scatter the sliced scallions and sesame seeds over the salmon, and serve hot.
 
+Cook in the air-fryer. Adapt times.

♥︎Sheet-pan salmon & broccoli with sesame & ginger

*Boil or microwave the broccoli until semi-soft, ensuring it does not remain hard. Optionally, add the spring onions and oil for 1 m. Then add the fish and fry for 12-15 m.

♥︎Grilled tuna with green beans, lemon, garlic & eggs

For ➍
1 tbs olive oil*
300 g green beans
4 tuna steaks, 220 g each & 3 cm thick
1 tbs extra virgin oil
2-3 eggs
2 cloves of garlic
lemon (finely chopped zest of a lemon)

Hard boil the eggs in 10 m, peel them and rub them through a sieve.
Clean the beans and cook them until al dente.
Shock them in ice water and then drain them well.
Heat the olive oil in a pan and fry the garlic in it.
Add the beans and heat well.
Season with the lemon zest, pepper and salt and carefully mix in the finely ground eggs.
Keep warm.
Rub the tuna steaks with extra virgin olive oil and grill them for about 5 m.
Season with pepper and salt afterwards.
Serve with the beans and southern sauce of your choice.

*or vegetable fat


♥︎Baked cod fillet with samphire, fennel, potatoes & lemon mayonnaise

For ➋
250 g baby potatoes*
1 red onion
1 clove of garlic
1½ pieces of fennel
½ lemon
5 g fresh dill
50 g mayonnaise
2 cod fillets
50 g samphire

Preheat the oven to 200°C. Wash the potatoes and halve them. Place the potatoes in an oven dish and mix with 1 tbs olive oil per person. Season with salt and pepper. Bake the potatoes in the oven for 25 – 35 m. Stir halfway through.
In the meantime, chop the red onion and press the garlic. Halve the fennel, cut into quarters and remove the hard stems and core. Chop the fennel. Heat butter♥︎ in a frying pan over medium heat and fry the red onion for 2–3 m. Add the chopped fennel and fry gently for 10–12 m.
Then deglaze with 3 tbs water per person and let it reduce until most of the liquid has evaporated. Add more water if you want the fennel to be even softer. In the meantime, squeeze the lemon and coarsely chop the dill. In a small bowl, mix the mayonnaise with ½ tsp lemon juice per person.
Pat the fish dry with kitchen paper and rub with salt and pepper. Heat 1 tbs olive oil per person in a frying pan over medium heat and fry the fish for 1 - 2 m on each side.
Meanwhile, heat the remaining olive oil in another frying pan and fry the garlic for 1–2 m. Add the samphire and stir-fry for another 1–2 m.
Divide the potatoes over the plates, spoon the fennel next to them and place the cod on the fennel. Spoon the fried samphire on top of the fish and garnish the dish with the dill. Serve with the lemon mayonnaise.

*Or more.

♥︎Sea bass fillet with tomato & caper salsa

For ➍ 
4 large sea bass fillets with skin
1 fennel bulb,  4 slices of ½ cm, keep the fennel tops aside
2 tomatoes on the vine, peeled, without seeds, cut into cubes
4 tbs capers
2 cloves garlic, thinly sliced
1 handful of fresh thyme
6 tbs good olive oil
1 tbs lime zest
1 handful of watercress
pepper and salt

Fry the fennel, garlic and thyme in some olive oil until al dente.
For the salsa, mix the rest of the olive oil, capers, lime zest and tomato together and season with some salt and pepper.
Pat the pieces of sea bass fillet dry with kitchen paper and mark the skin of the fillets lightly with a small knife.
Fry the fish in a hot pan with a non-stick coating until nicely browned on the skin side, for about 3 to 4 m, turn off the heat and leave the fish in the pan for another 1 m.
Serve the fish skin side up together with the fennel, salsa and watercress.
Season everything with some coarse pepper and sea salt and the fennel tops.
Serve with fried potatoes.


Poached sole fillets with spinach puree & saffron

For ➍
12 sole fillets
500 g potatoes
350 g spinach
butter*
5 dl fish stock
1 dl cream**
saffron
pepper & salt
for the garnish:
thyme
spring onion

Cook potatoes in salted water, drain and crush.
Stew spinach. Mix into the mashed potatoes. Season with salt and pepper.
Poach the rolled sole rolls in 4 dl fish stock.
Reduce the remaining 1 dl fish stock with 1 dl cream* and a pinch of saffron. Season with salt and pepper.
Decorate with tufts of thyme and spring onion.

*Replace with olive oil
**Replace with oat cream.

♥︎Egg clouds with pancetta, thyme & oregano

For ➍
80 g pancetta*
4 eggs
2 sprigs of thyme
1 ts oregano
2 tbs olive oil
pepper & salt

Preheat the oven to 170°C. Separate the egg whites from the egg yolks. Beat the egg whites until foamy with the thyme, oregano, salt and pepper. Cover an oven tray with baking paper and spoon 4 mounds of meringue onto it. Make a well in each meringue and carefully pour in the egg yolks. Sprinkle with the finely chopped pancetta and place in the oven for 8 m.
Drizzle the eggs with a dash of olive oil and serve. Finish with arugula or another fresh herb if desired.

*Replace the pancetta with smoked turkey bacon or smoked salmon for a heart-friendly version or with spicy chorizo for an extra spicy version.


Salmon & miso butter & spinach

For ➍
25 g butter, at room temperature
25 g miso paste
1 ts finely grated lemon zest
1 ts lemon juice
250 g spinach
2 shallots
1 clove of garlic
4 tbs oil
salt
4 salmon fillets (150 g each)

Mix the soft butter with the miso paste, the finely grated lemon zest and the lemon juice into a smooth paste. [Put in the center of a piece of cling film. Roll up the foil tightly to form a roll, and twist the sides like with a toffee.]* Cool in the refrigerator.
Clean the spinach, wash the leaves and drain in a colander.
Peel and chop the shallots and garlic clove. Heat 1 tbs of oil in a large saucepan and sauté the shallot and garlic until translucent. Add the spinach. Sprinkle with salt and spoon the spinach leaves until shrunk. Add a little more salt if necessary.  Keep the spinach warm.
Grill the salmon fillet strips over hot coals or fry them in a non-stick pan in 3 tbs of oil.  Allow 3 to 4 m per side**.  Season the grilled or fried salmon with salt and put miso butter on top.

Serve the salmon on a bed of spinach. Serve with glass noodles or soba noodles. ***

*Optional
**The salmon will be glassy inside. If preferred, cook it for 1-2 m longer. 
Alternatively, marinate the salmon in a mix from miso paste, soy sauce, mirin, sesame oil, fresh garlic, ginger powder & honey. In a cast iron skillet fry the salmon with the non-skin part facing down for 1 m. Then flip salmon over and bring the cast iron into the oven and bake for 8-11 m (depending on thickness of salmon)Send salmon into the oven directly and bake for 11-15 minutes (depending on thickness of salmon). Or bake salmon in the oven directly bake for 11-15 minutes (depending on thickness of salmon). You can mix half of the marinate with 1or 2 tbs of water, boil for a m, and glaze the salmon with it, instead of using the miso butter. 
***Add some sauce to the noodles to spice them up.

Salmon poke tower

raw salmon in pieces, marinated with soy sauce & sriracha mayo
pieces of avocado
seaweed salad
cooked edamame
sliced spring onion
mix of sesame & poppy seeds

Place the ingredients in the ring. Press each layer well. Create a layer with
rice,
cucumber,
marinated salmon,
avocado,
seaweed salad,
edamame beans,
spring onion.
Squeeze a strand of sirarcha mayo over the ingredients.
Sprinkle with mix of sesame and poppy seeds.
Serve.


Seared tuna on spicy risotto

For ➋
1  garlic clove, peeled & crushed
2 tbs olive oil
2 x 200 g tuna steaks
2 tbs olive oil
300 g risotto rice
5 spring onions, chopped
6 chestnut mushrooms, chopped
2 pinches chilli flakes
2 pinches  curry powder
20 cl white wine
80 cl fish fumet or chicken stock
sea salt & pepper, freshly ground
10  cherry tomatoes
2 tbs olive oil
1 lime, quartered

Preheat the oven to 200°C.
Mix together the lime juice, garlic, olive oil and salt & pepper in a shallow dish. Add the tuna and turn over several times to coat in the marinade. Place in the refrigerator until required.
For the risotto heat the oil in a wok until it is smoking, add the risotto rice, spring onions and mushrooms and fry for 4-5 m. Add the chilli flakes, curry powder and wine and bring to the boil, when the wine has been absorbed slowly add the stock. Bring the mixture to a simmer and gradually add the fumet or stock continuously stirring for 18-20 m until the rice is creamy and tender.
In the meantime, place the tomatoes into a roasting tin, drizzle over the oil and season. Roast in the oven for 6-8 m.
Sear the marinated tuna in a hot chargrill pan for 1 m on each side or until browned all over and pink in the middle. Remove from the pan to rest.
To serve, spoon the spicy risotto into a shallow bowl and place the tuna steak on top. Arrange the roasted tomatoes over the tuna and garnish with half a lime.

Ship Green Label Madras Curry Powder recipe

For ➍
450 g chicken, fish, lamb, vegetables 
2 tbs curry powder (f.i. Ship Green Label Madras Curry Powder) 
1 tbs salt 
90 g vegetable oil or ghee 
2 large onions, sliced 
35 cl water* 
5.5 cl coconut milk

Take 450 g chicken or mutton or fish or vegetable pieces (washed & cleaned) and apply tbs of Ship Green Label Madras Curry Powder with 1-2 tbs salt. Rub over the pieces and keep aside. In a saucepan heat 90 g veg oil or ghee, add 2 large sliced onion and cook until light brown on medium flame. Add 35 cl of water to the rubbed pieces and cook for 15-20 min or until the pieces are cooked. You might also add salt, chili or pepper and 5.5 cl of coconut milk or per your taste.Garnish with chopped coriander and serve with rice or naan.
*Use extra 35 cl coconut milk instead for a creamier version.

Easy salmon sashimi

For ➋ 
250 g sushi rice
33 cl water
3 tbs sushi vinegar
2 tbs sugar or mirin
½ ts salt
150 g sliced salmon sashimi

Rinse the rice 3-4 times. Drain.
Add the water, cover and bring to boil. Cook covered for 10 m.
Close the fire and let the covered rice rest for 20 m.
If wanted, mix the vinegar, sugar or mirin and the salt to the cold rice.
Rub salmon lightly with rice vinegar and mirin (salt or light soy  sauce optional)
Cover with sliced salmon.
Serve.

* Serve with fennel salad if wanted.

Cod with spinach, shallots,
smoked salmon & Blanche du Hainaut

For ➋
800 g cod fillets 
4 tbs olive oil 
15 cl Dupont Blanche, Hainaut white beer
500 g spinach 
4 shallots, chopped 
100 g butter 
100 g smoked salmon, cubed
400 g potatoes 
1 bunch of chives 
25 cl fresh cream 
1 egg

Bake the cod fillets slightly in olive oil. Bake for 10 m in the oven at 180 ° C. 
Deglaze with white beer and simmer for 1 m.. 
Meanwhile, stew the spinach leaves cooked and shallots briefly in 50 g of butter . Add the smoked salmon into cubes increased. 
Boil and mash the potatoes. Add a bunch of chopped chives and warm cream to the puree.  Mix well and season with salt and pepper, then add the egg and 50 grams of butter.
Serve.


Herring salad with beetroot & potatoes

For ➋
200 g maatjes herring*
4 small or 2 large beetroots
500 g small potatoes
1 small red onion
1 tbs (grain) mustard
½ lemon, the juice
2 tbs olive oil + 1 extra dash
1 tbs wine vinegar**
1 bunch of dill
salt & black pepper from the mill

First roast the beetroot in the oven at 180 °C. Place the unpeeled beets on a sheet of aluminum foil. Drizzle with a dash of olive oil, 1 tbs wine vinegar**, a pinch of salt and pepper. Wrap the foil so that no moisture can leak out and roast 40 to 60 m in the oven. The beetroot is done when a potato knife slides through it easily.
Meanwhile, peel the red onion, cut into fine half rings and place in a small bowl. Mix in the juice of ½ lemon, 1 tbs mustard and a pinch of salt and pepper. Set aside until use and stir whenever you remember. Boil the potatoes in water with a good pinch of salt (no need to peel).
Remove the beetroot from the oven. Let cool, peel and cut into wedges. Cut the drained potatoes in half. Cut the herring into pieces and finely chop the dill.
Mix 2 tbs olive oil under the marinated red onion. Place in a large bowl and mix in the beetroot, potatoes and most of the dill. Finish with the herring and the rest of the dill. Give everything a few extra turns of the pepper mill and a pinch of salt. 
Serve the salad preferably lukewarm.

* Or 200 g herring fillets in vinegar
**Or 1 tbs brine vinegar from the herring


Seared tuna on risotto with samphire & tomatoes

For ➋
tuna:
1 lime (juice only) 
1 garlic clove (peeled & crushed)  
2 tbs olive oil      
sea salt & pepper (freshly ground) 
2 x 200 g tuna steaks
risotto:  
2 tbs olive oil 
200 g risotto rice
50 g leek, chopped  
20 cl white wine  
80 c fish fumet    
sea salt & pepper (freshly ground) 
10 cherry tomatoes  
150 g samphire 
1 tbs Parmigiano
1 lime (quartered)

Mix together the lime juice, garlic, olive oil and salt & pepper in a shallow dish. Add the tuna and turn over several times to coat in the marinade. Place in the refrigerator until required.
Heat the fish fumet.
Heat some olive oil. Add the leek. Cover and cook mildly on moderate heat for 10-15 m. 
Add the rice until coated in the oil.
Slowly add the wine, and stir it through the rice.
Add most of the fumet. Cover and cook on moderate heat for 10-15 m, depending on the rice. Add some more fumet if needed.
Meanwhile, half the cherry tomatoes, and bake them in some oil.
Bring some of the fumet to boil and cook the samphire for 2-3 m.
When the risotto is soft and creamy, add 1 tbs Parmigiano. Add the tomatoes and samphire. Cover and let stand for 1 m. Spoon the risotto on plates
Bake or grill the tuna for 1 m on each side. Cut the tuna in nice slices and add to the plates. Serve immediately with quartered lime.

White fish with caramelized citrus butter & capers

For ➋
2 firm slices of white fish fillet, preferably with skin (choose a firm type, such as halibut)
75 g butter + 1 cube for frying fish
2 tbs capers
1 organic lemon
12 sprigs of fresh oregano
freshly ground black pepper & salt

Preheat the oven to 90 ° C. First fry the fish in a pan that can also be put in the oven. Melt a knob of butter in it over medium to high heat and let it heat up well. Season the fish on both sides with salt and pepper. Bake about 4 m on one side, until you have something of a crust. Make sure that the butter does not burn. Lower the heat if necessary.
Turn the fish over and place about 10 m in the oven. (So ​​you do not cook both, but only on one side.) The fillet should be cooked but still juicy, depending on the size this can take a few minutes longer.*
In a second pan, melt the butter over medium heat. Wait until the butter starts to fizz, stir gently with a wooden spoon and keep stirring occasionally until the butter starts to turn golden brown after 5-10 m and smells like nuts.
In the meantime, cut half of the lemon into fine half slices and remove the seeds. Add to the butter together with the capers and fry for 5 m until the lemon starts to brown very slightly.
Season with a pinch of salt and pepper and mix in the oregano (keep 2 sprigs separate for the finish). Place the fish on plates and spoon over the sauce. Finish with the oregano sprigs and an extra turn of the pepper mill. Add the rest of the lemon in wedges. 
Serve with mashed spinach puree.

*Or bake the fish carefully in a pan.

Whitefish with samphire & Jerusalem artichokes salad

For ➍
4 small whitefish fillets Pieterman, golden bream or sea bass
0.4 bag of mesclun lettuce
samphire or lamb's lettuce
2 Jerusalem artichokes
hazelnuts
walnuts
butter
pepper & salt
for vinaigrette:
1 dl olive oil
0.2 dl nut oil
1 cl sherry vinegar;
lemon juice

Clean the fish.
Cook the samphire in butter for 2 m.
Mix vinaigrette with 1 dl olive oil, 20 cl nut oil, 1 cl sherry vinegar and lemon juice.
Peel Jerusalem artichokes and cut them into wafer-thin slices with the mandolin and marinate in the vinaigrette.
Roast hazelnuts and walnuts with a little butter in the oven and chop coarsely afterwards.
Arrange salad, warmed samphire,  and nuts on a plate.
Season fish with pepper and salt. Fry on the skin side. Must be practically completely white. Place on top of the green mixture, skin side up. 
Finish with the Jerusalem artichoke vinaigrette.

Cod & chorizo

For ➍
1 fennel bulb, halved & thinly sliced, fronds reserved (about 200-250 g)
140 g Spanish chorizo, cut into 1 cm slices 
4 skinless cod fillets (each 120 g) 
salt & freshly ground pepper 
85 g cherry tomatoes, halved, or quartered if large
2 cloves garlic, thinly sliced
2 tbs unsalted butter 
10 cl dry white wine, such as Sauvignon Blanc
1 small orange 
extra-virgin olive oil & toasted sliced baguette, for serving

Preheat oven to 200°C.
Fold 4 30x40 cm pieces of parchment (or aluminum) in half; unfold and place one-quarter of fennel and chorizo along each crease. 
Season both sides of fish with salt and pepper; place one fillet on each package. 
Top with tomatoes, garlic, butter, and wine. 
Remove zest from orange with a vegetable peeler. Thinly slice into strips to yield 1 tbs. Scatter evenly among packages. Squeeze 1 ts juice over each package. 
Fold parchment over to enclose, making small overlapping folds along edges to seal. 
Transfer to 2 rimmed baking sheets. Roast until parchment puffs and fish is cooked through, for 20 m. 
Place each package in a shallow bowl and open carefully, allowing steam to escape. 
Serve with fennel fronds, a drizzle of oil, and toasts.

Braised fennel with lemon

For ➋ or ➍ (as side dish)
3 fennel bulbs, quartered
15-25 cl water**
8 cl olive oil
2 ts ground fennel seeds
2 tbs freshly squeezed lemon juice* 
1 tbs chopped fennel fronds

Arrange the fennel in a large skillet. Add enough water to the pan to come at lease halfway up the sides of the fennel. **
Drizzle the fennel with the olive oil, sprinkle with the fennel seeds and season with salt and freshly ground black pepper. 
Bring the fennel to a simmer, cover and cook over medium heat, shaking the pan every now and then, until the fennel is tender, 20-30 m.** 
Remove the lid for the last few m of cooking to allow the liquid to reduce and thicken. 
Stir in the lemon juice* and fennel fronds. 
Serve the fennel drizzled with the thickened cooking liquid. 
Serve with roasted chicken, grilled halibut or salmon, grilled or roasted meats. 

*Use fresh blood orange juice instead.
**Chop the fennel, add 4 tbs blood orange juice, 2 tbs olive oil, cover and cook in the microwave (about 7 m for 500 g fennel). Serve with cherry tomatoes and fregola, and roasted salmon.
