Garlic scampi @ microwave

100 g butter
5 cloves garlic, minced
2 tbs lemon juice
2 tbs chopped fresh parsley
½ ts salt
⅛ ts white pepper
500 g medium prawns, peeled & deveined

In a shallow microwave baking dish, combine all ingredients except shrimp. Cook, uncovered, on high power for 3-4 m or until butter is melted and mixture is hot, stirring once during cooking.
Add shrimp and stir to coat. Cover with microwave safe plastic wrap, venting one corner, on high for 3-5 m or until shrimp curl and turn pink. Let stand on solid surface, covered, for 3-5 m before serving.

Serve with rice or linguini pasta for as a main course, or with good bread as a starter.
