Cook onions in 2 tbs oil. Add tomatoes and cook for 15 m. Add salt, pepper and coriander/thyme. Keep warm.

*If you can't find real endives, try a red salad with a nice bitter taste. Adjust cooking time to the firmness of the vegetable.
